Tracicle's shamelessly stolen recipe for Coconut Chocolate Brownies
- 125g butter (4oz)
- 1/4 cup cocoa
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla essence/extract
- 1/2 cup coconut (shredded/dessicated)
- 1/2 cup plain flour
- 1/2 tsp baking powder
- icing sugar to dust
Melt butter in a medium saucepan. Add cocoa. Stir over a low heat for 1-2 minutes. Remove from heat and stir in sugar. Add eggs one at a time, beating well after each addition. Beat in vanilla and coconut. Sift in flour and baking powder and stir to combine. Pour into a greased and lined shallow 20cm square (8") cake tin. Bake at 180C for 30-35 mins. Leave in tin for 5 minutes before turning out onto a wire rack. Cut into bars when cold. Dust with icing sugar. Eat it all.
